| Mom’s Favorite Recipe | Rawa (fine semolina) kichdi This is a very quick, nutritious Indian snack/meal that my kids love. I shape them into little balls. My kids get a kick out of eating ‘dino eggs’. Sputter mustard, 1/4 tsp cumin seeds (jeera), 1/4 tsp urad dal in a tbsp of oil. Sautee chopped ginger and chopped onions until transluscent. Other veggies such as potatoes, cabbage, carrots, peas, beans etc may be added and sauteed until partly done. Boil 4.0 cups of water. The above sauteed ingredients may be added to the water as it comes to a boil. Roast 2 cups of rawa (fine semolina) in a tbsp of ghee (clarified butter), until lightly brown. Turn the stovetop setting to medium-low and add the rawa to the boiling water, stirring all the time so lumps are not formed. Switch off the stovetop when the rawa is cooked. Garnish with chopped coriander leave and dessicated coconut. |
