Ingredients
- 1 1/2 cup fine grain bulgur (we use Near East brand plain Couscous)
- 2 medium sized tomatoes, cut in small pieces
- 1/3 cup finely chopped scallion
- 1 cup parsley, finely chopped
- 1 small seedless cucumber, peeled and chopped in small pieces
- 1/3 cup chopped fresh mint
- 1/3 cup lemon juice
- 1/2 cup extra virgin olive oil
- salt and pepper to taste
Method
Place the bulgur in a bowl and add 1 1/2 cups boiling water. Cover and let it sit for 20 minutes or until all the water is absorbed. Stir the bulgur with a fork a few times. Add the tomatoes, scallions, parsley, cucumber and mint. Mix well. Stir in lemon juice and olive oil and mix with a wooden spoon. Season with salt and pepper. Cover and refrigerate for 30 minutes before serving.
