Simple Recipes – Turkish Bulgur Salad

4 toddler servings, 2 adult servings

Ingredients

  1. 1 1/2 cup fine grain bulgur (we use Near East brand plain Couscous)
  2. 2 medium sized tomatoes, cut in small pieces
  3. 1/3 cup finely chopped scallion
  4. 1 cup parsley, finely chopped
  5. 1 small seedless cucumber, peeled and chopped in small pieces
  6. 1/3 cup chopped fresh mint
  7. 1/3 cup lemon juice
  8. 1/2 cup extra virgin olive oil
  9. salt and pepper to taste

Method

Place the bulgur in a bowl and add 1 1/2 cups boiling water. Cover and let it sit for 20 minutes or until all the water is absorbed. Stir the bulgur with a fork a few times. Add the tomatoes, scallions, parsley, cucumber and mint. Mix well. Stir in lemon juice and olive oil and mix with a wooden spoon. Season with salt and pepper. Cover and refrigerate for 30 minutes before serving.
