Simple Recipes – Egg Saute with Tomatoes

Ingredients

  1. 4-5 tomatoes, pureed in a food processor
  2. 1 medium sized onion, finely chopped
  3. 4-5 eggs, beaten
  4. 1-2 sweet mini-peppers, chopped
  5. 2 tbsp olive oil
  6. Salt and pepper to taste
  7. Chopped parsley or cilantro (optional)

Method

  1. Saute the onions in olive oil over low to medium heat until softened
  2. Add chopped peppers
  3. Add tomato puree, mix well and cook for a few minutes
  4. Add beaten eggs and mix. Stir occasionally to make a uniform mixture
  5. Cook for 10-15 minutes until eggs are fully cooked
Serve with french bread.
